Several summers ago, I had an assignment for a kids' magazine in which one of things I was supposed to do was come up with a kid friendly recipe incorporating peaches. I wasn't that excited at the prospect because, while I love the flavor of peaches, I admit that I have a little issue with the texture. Then again, I could see children having the same issue so I set out with that in mind. I don't even remember what the final recipe was; in the midst of experimenting, however, I managed to create a beverage that has become my signature summer contribution to every barbecue, party, and picnic that I'm invited to. It's also become one of my most requested recipes. I hope you enjoy it!
Peach Lemonade
2 cups lemon juice (about 13 lemons)
1 1/2 cups sugar + 4 tsp. sugar
8 cups cold water
4-5 medium size peaches
Whisk 1 1/2 cups sugar into 2 cups lemon juice, until sugar is dissolved. Add 8 cups cold water and set aside. Place the peaches and 4 tsp. sugar into a blender and puree until smooth. Add to the prepared lemonade; then strain through a fine sieve into a clean pitcher.

I made this last night! I only used a cup of sugar, and oooh baby! I get puckered up just thinking about it ;)
Very tasty and refreshing though.
